Vinifikation

Sieur d'Arques 'Grande Cuvée 1531 de Aimery' Crémant de Limoux is a cuvée made from Chardonnay, Chenin Blanc and Mauzac and was of course produced using the méthode traditionnelle, i.e. the classic bottle fermentation. The cuvée was left on the yeast for 11 months.
