The 'Edda' consists mainly of Chardonnay and native white grape varieties. The grapes come from Salento, Apulia, and grow on soils with a medium-fine structure. The vines are trained in the Guyot system with 4,500 vines per hectare. After the harvest in the second decade of August, there is cryomaceration for several hours, gentle pressing and static, cold decanting. Fermentation and aging take place for four months in French oak barriques, with weekly bâtonnage.
