The extensive maturation produces wines of elegance, depth and restraint, while showcasing the unique aspects of the terroir. The wine displays a seductive nose with oriental spice notes and dark fruit complexity. Fine notes of black pepper and a hint of soy sauce (saltiness) over a dark fruit core form the centre of the palate, while the rough texture adds grip before a wonderfully fresh finish follows.

Vinifikation

The grapes were hand-picked in the cool of the morning and then rigorously selected, paying particular attention to eliminating any raisins or berries that had received too much sun to bring out the natural purity of the fruit. From there, the grapes were destemmed and lightly crushed. A small portion (around 30%) of the fruit was fermented as whole bunches in an open fermentation tank. This process highlights the spiciness of the variety and brings delicate floral aromas to the final blend. Th
